Arancine

  • risotto
  • breadcrumbs
  • 1 egg
  • mozzarella
  • ragu

Make a basic risotto and let it cool down. Mix some of the breadcrumbs with the risotto. Take a bowl with cold water to make your hands wet and form a ball in your hand. Make a dent into the ball and place some mozzarella, ragu or both into it. Close it again with some more of the rice.
Beat an egg and roll the ball in it, then roll the ball over breadcrumbs. Fry the arancine in very hot oil for some minutes until they are nice and golden brown. Serve them still warm with lots of love and
